What is the pH of tofu?
Tofu resembles a soft white cheese and can be defined as ‘a water extracted and salt- or acid-coagulated soy protein gel with water, soy lipids, and other constituents trapped on its network’ that was developed in China and spread through East Asia.
More water is released when the hardness of tofu is enhanced due to the subsequent bonding among the proteins and coagulants via various interactions during the storage, resulting in the tofu with more dense and compacted texture and increased syneresis ( Karim et al., 1999; Murekatete et al., 2014 ).

Soy sauce, miso, tamari and all other fermented foods are acid-forming.
Tofu in water is a breeding ground for significant amounts of harmful bacteria, and if it is not cooked thoroughly, it is likely to lead to some form of gastrointestinal illness. Both of the prepackaged containers of tofu — Kinugoshi and Mori Nu brands — had relatively low levels of total bacteria and no E-coli.
High-Alkaline Root Vegetables Root vegetables like onions and potatoes are a staple in American diets. These roots along with chicory, beets and parsnips are also high alkaline.
Tofu is a low-acid food. Very low. Plus, it’s a fantastic source of protein. So, instead of getting your protein only through fatty sources such as red meat, try mixing things up by bringing tofu into your diet.
Whole grains — High fiber, whole-grains like brown rice, oatmeal, and whole grain breads help stop symptoms of acid reflux. They are a good source of fiber and may help absorb stomach acid. Lean protein — Low-fat, lean sources of protein also reduce symptoms. Good choices are chicken, seafood, tofu, and egg whites.
While most legumes are acid-forming foods, soy beans are neutral or alkaline. Usually, soy milk is alkaline forming in the body.
The finished tofu product has a high protein content (7g protein per 3 oz. serving size), a pH value of approximately 7.0, and a soft and bland flavor.
